Barro Negro clay cookware is handmade in the Andes, Colombia. The manufacturing process has developed over 700 years and makes excellent use of local volcanic clay. Safe in all kinds of cooking and cleaning environments from Aga to oven, ceramic to gas, BBQ to microwave, even under the grill or on a bonfire. Easily cleaned, dishwasher friendly as well as freezer safe.
This casserole cook pot can be used for just about anything - curries, chillies, casseroles, soups and fish pie! To save washing up, bring the pot straight to the table to use as a serving bowl!
The top is cool, while the bottom is hot. You can literally take it from the hob without an oven glove (but do check to be sure). The bowl will remain warm for up to one hour after removal from the heat source, which enables the food to remain warm enough for second helpings!
It is regularly agreed by top chefs that clay pots give a distinct, unique and enhanced flavour to food. The distinct flavour occurs because the 'firing' process leaves the pottery slightly porous. As a consequence of this, every time you cook with a clay pot the already absorbed flavours from previous dishes, adds depth and extra taste to future meals.

Prior to use
For the best performance of your new cookware and to create an effective seal,
- Clean with washing-up liquid and water.
- Fill 2/3 full of water and place in an oven for 30 minutes on 200C, gas mark 6.
Or,
- Soak the pot/bowl, towel dry and then rub the internal surface with cooking oil.
The best results are achieved once the pot/bowl has been used 4-5 times.
Taking care of your cookware
Try to avoid very cool liquids being placed into the hot cookware. The cookware will continue to boil up to one hour after removing from the heat if the lid is used. If the food is burnt or stuck to the pottery, soak for a couple of hours and then use a nylon scouring pad to remove the food. Use wooden rather than metal utensils.
Be aware
As the pottery is slightly porous, it should be placed upon a saucer when being used for storing liquids, especially in hot climates. In hot climates a clay pot is ideal for storing liquid, as any that percolates out evaporates, keeping the liquid inside the pot cool.
